Vegan Pumpkin Pie Pudding

Prep Time: 15 minutes Chill Time: 2 hours Servings: 6

Ingredients: For the Pudding Base:

  • 1 can (15 oz) of pumpkin puree

  • 1/2 cup of brown sugar

  • 3 tablespoons of cornstarch

  • 1 1/2 cups of coconut milk (or any plant milk of your choice)

  • 1 teaspoon of pure vanilla extract

  • 11/2 teaspoons of Pumpkin Pie Spice

  • 1 teaspoon of turkey tail mushroom extract powder

  • A pinch of salt

  • Crushed vegan graham crackers for garnish

  • A sprinkle of cinnamon

Instructions:

  1. In a medium saucepan, whisk together the cornstarch and brown sugar until well combined.

  2. Slowly pour in the almond milk while continuously whisking to ensure there are no lumps. Heat the mixture over medium heat.

  3. Add the pumpkin puree, vanilla extract, pumpkin pie spice and turkey tail to the saucepan. Stir well to combine.

  4. Continue to cook the mixture over medium heat, stirring frequently, until it thickens to a pudding-like consistency. This should take about 8-10 minutes.

  5. Once the pudding is thick and creamy, remove it from the heat. Add a pinch of salt and stir to incorporate.

  6. Carefully transfer the pudding into individual serving dishes or small jars.

  7. Let the pudding cool at room temperature for about 15 minutes, then refrigerate for at least 2 hours to set and chill.

  8. When you're ready to serve, top each pudding with a generous dollop of coconut whipped cream.

  9. Sprinkle a bit of crushed vegan graham crackers over the coconut cream to mimic a pie crust, and add a touch of extra cinnamon for a finishing touch.
